In a bowl, combine the honey and soy sauce with 1/2 cup water. In a wok, heat a few tablespoons of oil. Stir-fry the garlic and ginger for 30 seconds, add the wings and cook until they are brown, about 5 minutes. Add more oil if necessary.
Add the soy mixture to the pan and turn down the heat to simmer. Cover and cook 20 minutes, or until wings are cooked through. Stir occasionally. Remove lid, turn up heat and stir-fry the wings while the sauce is reduced to a glaze.
